Billy puts it plainly: “Our culinary style is inspired by indigenous and pioneer cultures of the desert and mountains. It’s a bit of an old-world throwback. We take 17th and 18th century pioneer and indigenous recipes and put a modern spin on them. It’s very different from the typical French-influenced fine dining you’ll find elsewhere.”
His geology background deepens that further. Guests often tell us that by the end of the meal they see the landscape around them differently. That kind of experience only comes from a company that was genuinely shaped by this place.

Sedona Is Where Our Story Began
In 2016, Billy Woods finished school and founded a geology-focused guided hiking outfitter in the desert Southwest, running a private chef firm alongside it. For nearly three years he operated both separately, watching something interesting happen on both sides. Adventure clients kept gravitating toward the food. Private dining clients kept asking about the geology. The landscape kept showing up at the table whether he planned for it or not.
By 2018 and 2019 it was clear those two things belonged together. Canyons and Chefs launched as the company that could hold all of it: the culinary training, the earth science background, the years of cooking and guiding in this specific region, and the growing roster of clients in Sedona and across the Arizona market who had already trusted us with their most meaningful moments.
Billy describes the brand he built as one of “comfortably refined expertise.” Guests can get genuinely excited about what we do without ever feeling like anything is being pushed on them. That disposition did not come from a branding exercise. It came from years of learning what people actually want when they invite a chef into their home or follow a guide into a canyon.
Our professional roots include membership in the American Culinary Federation, the American Personal and Private Chef Association, and the Geological Scientists of America, alongside the academic geology and earth science training that gives our Sedona experiences a depth no standard culinary background can provide.
