It’s a bit of an old-world throwback, we take 17th- and 18th-century pioneer and indigenous recipes and put a modern spin on them. It’s very different from the typical French-influenced fine dining you’ll find elsewhere.”

Billy Woods spent years in professional kitchens before stepping away to pursue degrees in geology and earth science. What followed was a geology-focused hiking outfitter, a private chef firm running alongside it, and eventually the understanding that the two belonged together. Canyons and Chefs was founded in 2019 from that intersection.
